A steadier glucose response.
We tested what happens after people eat an Atlas Bar. In a randomized crossover study, the tested bar produced a 77.7% lower mean plasma glucose response than white bread.

The chart shows the mean change in plasma glucose after each food. The difference is most visible in the first hour, when the white-bread response rises sharply. The randomized crossover study included 12 healthy adults, with each participant testing both foods on separate visits.
Why the response was different
Most snack bars get a meaningful share of their structure and sweetness from sugar or rapidly digested starch. Atlas takes a different approach.
Minimal starch
The tested bar contained 2.5% total starch, limiting rapidly available glucose.
Protein, fiber and fat
These macronutrients create a food matrix that digests differently from a sugar-led snack.
Ingredient choices
The formula avoids added sugar, sugar alcohols and rapidly digestible syrups.
A second method found the same thing.
Independent laboratory testing measured very little rapidly available glucose. Human response and laboratory analysis pointed in the same direction.
Why this matters
Blood glucose naturally rises after you eat carbohydrates. A protein bar should not behave like a high-carbohydrate snack.
The tested Atlas Bar combined protein and fiber with very little sugar and produced a much smaller post-meal glucose response than white bread. The nutrition profile translated into a steadier response in the people studied.
Short-term study in 12 healthy adults. Long-term health outcomes and medical conditions were not evaluated.
