    A steadier glucose response, measured.

    In a randomized crossover study, an Atlas Bar produced a 77.7% lower mean plasma glucose response than white bread. Atlas’ unique formula is specifically designed to support a steadier glucose response.

    Why the response was different

    Refined flour, starches and sugars form the base of many packaged foods. These carbohydrates break down quickly into glucose, and the size of the response depends on how much digestible carbohydrate arrives at once and on the structure of the food carrying it.

    Atlas combines protein, fiber and fat while keeping rapidly available carbohydrate low. Together, the amount of digestible carbohydrate and the food matrix surrounding it shape how quickly glucose reaches the bloodstream. Because the study tested the complete formula, it cannot attribute the result to any one factor.

    We tested it in the lab, too

    Independent laboratory testing used an in vitro digestion method to estimate glucose release after 20 and 120 minutes. It found low values at both points: G20 of 1.2 and G120 of 2.9 on a dry basis, alongside 2.5% total starch.

    The laboratory method measures something different from the human study, but both point in the same direction: the tested bar exhibited low rapidly available glucose.

    Why this matters

    Blood glucose regulation is fundamental to metabolic health. Digestible carbohydrate raises blood glucose, and the body releases insulin to move it back toward baseline. The size and speed of that rise shape the insulin response required.

    Atlas’ unique formula pairs protein, fiber and fat with very little sugar. In a human study, the tested bar produced a much smaller glucose response than white bread, while independent laboratory testing found very little rapidly available glucose.
